Caramel Pecan CakeSo I asked my husband what dessert he would like me to make for Christmas with his family.  He said he wanted something with caramel, nuts and chocolate.  Sounds like a Caramel Pecan Cake, right?  I found several recipes like this…some were called Snickers Cake and other variations.  I used the recipe over at Six Sister's Stuff as the basis for my cake!

Now I will warn you….this isn't the prettiest cake you have ever seen.  It doesn't have frosting…and you know how the top of a cake looks….kind of wrinkly!  It is also VERY sweet….so a small piece will suffice.  BUT….it is GOOD…REALLY GOOD!  

It was a big hit with my husband and his family….and will be in the dessert rotation now!

Ingredients for Caramel Pecan Cake

1 German Chocolate Cake Mix

3 eggs

1 1/3 cups water

1/2 cup vegetable oil

1 (11 oz) bag of Kraft caramels unwrapped

1/4 cup milk

1/3 cup butter

2 cups chocolate chips

1 cup chopped pecans

How to Make a Caramel Pecan Cake

Mix the cake mix together per package instructions. Pour half of the batter into a greased 9 x 13 baking pan and bake for 20 minutes at 350 degrees.

While this bakes, put unwrapped caramels, milk and butter into a small sauce pan and melt over low heat. It is very important to stir constantly until the caramel is melted and smooth.

When the cake is done, pour the caramel on top as soon as you take it out of the oven.

Sprinkle the chocolate chips and pecans onto the caramel. Spread the remaining cake batter on top and spread to the very edges of the pan. Try to cover all the caramel, chocolate chips and pecans. This is the most difficult step and it doesn't have to look perfect to taste great!

Bake for 20 more minutes at 350 degrees.

This is great served with some vanilla ice cream…to help tame the sweet in the cake, lol!

  1. It does look and sound good, and sweet. “Now I will warn you….this isn’t the prettiest cake you have ever seen,” some of the best foods might not be the prettiest, but they are good! Peace! 🙂
