Depending on your preferences for flavor and how much meat you want to use, you can use various kinds of sausages to make this roasted sausage and vegetables recipe. These are a few well-liked options:

1. Italian Sausage

Of course, you can't go wrong with root vegetables. You have carrots, parsnips, beets, turnips, and potatoes. It is a great texture to have with the other vegetables.

SQUASH

For a sweet addition to your veggie medley, toss in some butternut, acorn, or delicata squash.

BRASSICAS

Roasting different brassicas give them a nutty taste. Definitely a flavor you want to add to your dish. Examples of which are broccoli, cauliflower, and brussels sprouts.

TIPS FOR THE BEST ROASTED VEGETABLES

For the best results, follow these incredible helpful suggestions when roasting veggies:

  • COOK IN HIGH HEAT – make sure to follow cooking temperature to achieve that nice caramelization.
  • CUT UNIFORMLY – this will allow them to cook evenly.
  • TOSS WITH OIL – a light coat will give the veggies a beautiful golden brown color.

  • Russet Potatoes

HOW TO MAKE OVEN ROASTED SAUSAGE AND VEGETABLES

Now that you have gathered all of your ingredients, it is time to make this yummy recipe. Follow the instructions below for the best results!

STEP ONE: PREPARE VEGETABLES

Before everything else, preheat the oven first. Set the temperature to 400 degrees F and allow to heat up. Grab your vegetables, knife, and chopping board. Slice each into bite size pieces. Having them in uniform slices will be better.

STEP TWO: SEASON THE VEGGIES

After you slice all of them and finish. Transfer them into a ziploc bag. In the bag, add the olive oil, salt, garlic, and pepper.

Seal the bag properly and mix well until everything in the bag is coated with all the spices and oil.

STEP THREE: ROAST PREPARED VEGETABLES

Once the veggies are ready, get a pan and wrap it in foil. Spread out the vegetables in a single layer on the pan. Bake veggies for 20 to 25 minutes. Remove the veggies from the oven, add the sausage to the pan, and toss everything together so that the vegetables and sausage are evenly distributed.

Put the pan back in the oven and bake it for an additional 20 to 30 minutes, or until all the vegetables are cooked to your liking.

STEP FOUR: SERVE

When you are satisfied with the texture and tenderness, take out the pan from the oven and transfer to a serving plate. Garnish and serve, enjoy!

Ingredients
  • 1 package Smoked Sausage of your choice
  • 16 oz baby carrots
  • 4 medium russet potatoes cleaned and cut up into bite size pieces
  • 2 medium bell peppers cleaned and sliced
  • 4 Tablespoons Olive oil
  • 1 teaspoon minced garlic
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. Clean and cut up all your vegetables into bite size pieces.

  3. Place all veggies into gallon size Ziploc bag. Add oil, salt, pepper and garlic to bag.

  4. Close bag and shake bag and move it around until all veggies are coated with oil and spices to your liking.

  5. On a large jelly roll pan covered in foil, dump out all veggies into a single layer.

  6. Bake vegetables for about 20-25 minutes. Take veggies out of the oven, add sausage to the pan and stir the vegetables and sausage around, leaving them in an even layer.

  7. Return pan to the oven and bake for another 20-30 minutes depending on how you like your vegetables cooked. When the vegetables are cooked to your satisfaction, take out of oven and enjoy!

Recipe Notes

You can use almost any vegetable that you like in this dish. Cauliflower, broccoli, zucchini, etc. all will work great! Just remember that some vegetables take longer to cook. If you use broccoli, you may want to wait and add it when you add the sausage so that it doesn't get burnt.
You can use any oil that you prefer. I usually add about a Tablespoon of oil per pound of veggies. You want them to have a nice coat of oil so that they roast well and get that nice crispy roasted taste!
You can also add whatever spices you like to this dish! It is very easy to customize for your preferences!
